The best dessert you’ll ever eat.
I don’t always eat paleo, but when I’m searching for a healthy dessert, paleo is usually the way to go.
SO a few weeks back, a paleo friend and I set out to try some coconut paleo recipes we had found on pinterest. What did we do before Pinterest?
Anyways, we tested out some coconut cake bite cookies and coconut butter blondies. The coconut cookies turned out to be somewhat of a flop. They were pretty good, but not impressive. Next we set out to make the coconut butter blondies. My first clue they would be a success? They contain coconut butter!!
Have you had coconut butter? Its rich, velvety and sheer, decadent, amazingness. I haven’t utilized it as an ingredient in many of my recipes because it can be pricey, but Rolling Oats has it on sale for $6.99 right now- so go stock up
Coconut butter-rich in lauric acid which boosts immunity and fights infection, provides stress relief, and aids in proper digestion and metabolism
Mejool Dates-excellent alternative to processed sugar, high in vitamin B6, A, K, and rich in potassium and magnesium.
If you haven’t yet had coconut butter, you MUST try this recipe. And while you’re baking, help yourself to a heaping spoonful of the coconut butter. (I mean, not that I did that…) And if you have had coconut butter before, or are just looking for a satisfying paleo dessert, this is the recipe for you!
After tasting these blondies, I was truly amazed they were completely paleo! I mean I’ve had some good paleo desserts, but these blondies were honestly one of the best things I’ve ever tasted- even better than not-so-healthy desserts. You would never guess they are grain free and good for you!
So please, please go make these Coconut Butter Blondies. Your life will never be the same.
Coconut Butter Blondies

1/2 tsp Pure Vanilla Extract
1/2 tsp Baking Soda
1 cup Coconut Butter
1/2 tsp Liquid Stevia Extract
6 Medjool Dates, pitted
1 Tbsp Coconut Oil
1/4 tsp Sea Salt
Preheat oven to 325 and lightly grease an 8×8 baking dish with coconut oil. In a bowl, blend eggs, vanilla extract, salt, and baking soda together with a hand mixer. Add in one cup coconut butter and mix until thoroughly combined.
Place the dates in a microwave safe bowl, add 3 tablespoons water and microwave for 3o seconds. Remove and mash mixture with a fork. Add in 1/2 tsp vanilla extract, and 1 tablespoon coconut oil, and continue to mash with a fork. Add an additional 1 tablespoon of water and microwave for another 30 seconds and stir. Then, pour the date mixture into the batter.
Add in three drops of liquid stevia, stir and continue to mix until evenly distributed. Pour the batter into baking dish and bake at 325 for 20-25 minutes until golden. Let cool, then slice and enjoy!!
