Sweet & Spicy Slow Cooker Chicken

Even though I love to cook, I can’t resist a good slow cooker recipe.

Originally, the husband forbid me from ever cooking with a crockpot. Growing up, as I’m told, his mother only cooked from the crockpot and managed to somehow build an intense hatred in him for anything slow-cooked. For this reason, I didn’t even register for a crock pot when we were getting married.

However, with his intense love for chili last winter, I convinced him to give it a chance. Since then, there are a few select recipes I am allowed to use the crock pot for…do’s- chili, pulled pork, and this chicken. Do not’s- pot roast and cream of ANYTHING.

Health Benefits

Chicken-excellent source of protein, contains Vitamin B6 for energy and cardiovascular health, high in niacin, which protects against age related cognitive decline
Pineapple-high in vitamin c, manganese, vitamin b and can protect against macular degeneration

So I guess I should consider myself lucky that the hubby lets me at least make this in the slow cooker. In fact, I’ve had quite a few requests here on the blog for slow cooker recipes for those busy working women…you really can’t beat the science of the crock pot.

So here’s a super simple recipe for an easy weeknight dinner.

Sweet and Spicy Chicken

Sweet & Spicy Slow Cooker Chicken

Ingredients
1 pound chicken breast
1/2 onion, diced
1 pineapple, diced
20 oz homemade bbq sauce or 1 bottle of your favorite
Wheat Buns

Directions
Place chicken in the bottom of the crock pot. Top with onions, pineapple and barbecue sauce Cook on low for 8-10 hours or high for 4-6. When done, chicken should pull apart easily. Use a knife and fork to shred and pull apart. Serve! Does it get any easier than that?
