Chicken, Goat Cheese & Corn Quesadillas
I love me some goat cheese. Seriously, goat cheese on anything is heaven to me.
In a salad with pears and pecans, topping on pancetta crisps, or even in a cheesecake? Don’t get me started.
So when I saw a recipe for chicken and goat cheese quesadillas, I knew I had to re-vamp it, and make it Healthy Housewife style.
I added my “signature” charred corn, and swapped traditional tortillas for whole wheat.

Chicken-excellent source of protein, contains Vitamin B6 for energy and cardiovascular health, high in niacin, which protects against age related cognitive decline
Goat cheese-good source of protein, amino acid, calcium and potassium.
I ended up eating about half of the filling before the quesadillas were even done, but let me tell you…they were to.die.for. These will definitely become a weeknight staple.

Chicken, Goat Cheese & Corn Quesadillas
Ingredients
4 oz goat cheese
1/2 cup monterey jack cheese
Extra virgin olive oil
1/3 cup onion, chopped
3/4 cup corn kernels, shucked
1 tsp garlic powder
Pinch ground pepper
1 lb chicken breast, diced or shredded
2 tbsp fresh cilantro
6 whole wheat tortillas
Directions
Combine cheeses in a bowl and set aside.
Heat about 1 tablespoon of olive oil in a saute pan over medium heat. Add onion and cook 2 minutes, then add corn, pepper and garlic. Cook for another 2 minutes, turning temperature up to high briefly to sear corn. Add chicken and saute another 2-3 minutes.
Divide cheese over tortillas. Layer each tortilla with chicken mixture and fold.
Spray a large frying pan with cooking spray. Toast quesadillas on for 5-6 minutes flipping halfway through. Enjoy!
