Last minute pork chops
I am a planner. Beyond a planner. Each night’s meal is planned out the week before so I can grocery shop accordingly, and of course dream all day about what will be had for dinner. In fact, even though I grocery shop on Fridays for the following week, I am already making the list on monday for when I shop again the next friday. I know, I’m weird.
The other day however, we were somehow out of just about everything. I had set out pork chops that morning to make, and while at work started thinking, what am I going to do with those???? Spontaneity is not my forte, even when it comes to cooking. You know that show Chopped on Food Network? Where contestants open a box to find a bunch of random ingredients and make something up? I could NEVER do that. Give me a few hours to plan though, and I could come up with something wonderful.
When I say spontaneity is not a gift of mine, I am being nice. Literally, when plans change it takes my mind ten minutes to process and be ok with it. So ya, I’m a planner. I tell you all this to say that I was quite pleased with myself the other night when I went against my planning nature, and whipped up this “spontaneous” recipe within minutes.
Pork- LEAN cuts are good source of protein, thiamin, vitamin B6, phosphorus and niacin, riboflavin, potassium and zinc. Naturally low in sodium.
Pecans-very low in saturated fat, rank the highest among all nuts in regards to natural antioxidants, can lower cholesterol, can increase metabolic rates and enhance satiety therefore aiding in weight control.
Apple- rich in boron which helps prevent osteoporosis, rich in pectin, and low glycemic index.
Driving home from work I started to think “hmm…what goes well with pork”…”apples!”…”oo, and we have pecans, and cranberries!” Dunzo, pork chops with apple, cranberry, and pecan chutney! Look at me I’m just soooo spontaneous
Give these pork chops a try…and spontaneously let me know what ya think!

Ingredients
1lb Pork chops (about 3 chops)
1 medium size granny smith apple, diced
2 shallots, diced
2 Tbsp olive oil
1/3 cup chopped pecans
1/3 cup dried cranberries
1 Tbsp butter
salt & pepper to taste
Directions
Start by seasoning chops on both sides with salt and pepper. Heat olive oil in large skillet, when hot, add chops to and cook 1-2 minutes on each side, until browned and crisp. Set aside.
In another skillet, melt butter. Once melted, throw in the shallots and cook until translucent. Next, throw in the diced apple and cook until tender. Toss in cranberries and pecans and let cook for another few minutes.
Spoon apple mixture over pork chops and enjoy!
